The rains have come and the garden is rejuvenated. Everything is lush and green. A large batch of heirloom tomato sauce is on the stove, pickles are in the crock, apple/asian pear cider is bottled and put away and the Concord grapes will be juiced and made into jelly. The garlic will be planted this coming week. And we will continue caring for the fall plantings. With the week’s abundance try: Sharane’s Ratatouille (with eggplant) 2.5 c cubed eggplant, sprinkled with lemon juice 2 c. summer squash 2 c. tomatos 2 bell peppers 2 onions 4 cloves of garlic Heat ½ c. olive oil. Saute thinly sliced onion and crushed garlic until golden brown. Add eggplant and toss lightly to coat with oil. Add tomatoes and squash and stir. Mix together gently, cover and simmer for 30-40 minutes. May be eaten hot over rice or cold. |
